3 Tbl Spoons Oil (Vegetable)
1/2 Medium Onion Sliced
1/4 Red pepper Sliced
1/4 Green Pepper Sliced
2 Tsp Garlic Paste
2 Tsp Ginger Paste
2 Tbl Spoons Tomato purée
1 Tbl Spoon Curry Powder Hot
1 1/4 Tsp Coriander Powder
1/2 Tsp Hot chilli powder
1/4 Tsp Salt
1/4 Tsp Cumin
1/4 Tsp Turmeric
1/4 Tsp Sugar
3 Birds Eye Chilli
1/2 Tsp Tandoori Masala Powder
1/2 Tsp Mustard
250ml Water
6-8 pieces Meat, Vegetables, Paneer or Tofu
1 Chilli Finger Chilli prefered
1 Tomato Sliced
1/4 Cup Coriander (Fresh/Chopped)

Pieces of chicken, meat, paneer or vegtables cooked in chopped onions, garlic, ginger, peppers, tomatoes, green chillies and spices to create a thick, spicy sauce.

Heat the oil on high then add the onions and bell peppers and fry for a couple of minutes.

Add the garlic and ginger, mix through and fry for 1 minute.

Add in the tomato paste, spice mix, coriander powder, chilli, salt, cumin powder, turmeric powder, sugar, sliced chillies, tandoori masala and mustard. Stir through, add a little of the boiling water and continue to fry for a further minute.

Add 1/2 of the remaining boiling water, mix well and allow to fry for a minute to reduce slightly.

Add the rest of the water, the green finger chill, fresh tomato, your choice of protein and most of the fresh coriander. Mix through and cook for 3-4 minutes until the oil separates.

Serve sprinkled with the chopped coriander.
